Classic Victoria Sponge | August 2017



Bruces absolute favourite cake is a Classic Victoria Sponge and as it was his Birthday yesterday, perfect excuse to bake one up for him. I really love baking and don't often have the chance to do so.
A Victoria Sponge is super easy and if your new to baking or just fancy baking something up quickly, this is the perfect recipe for you. I always follow the wonderful Mary Berry's recipe and just alter the measurement depending on how many I'm baking for. 
Below is the recipe for 12 slices;

225g Self Raising Flower
225g Caster Sugar
225g Butter
4 Free Range Eggs
2 tsp Baking Powder

Icing Sugar
Flavoured Jam

Firstly pre-heat your oven to around 180C/350F and leave that warming up whilst you create your cake. Mix up your Flour, Butter, Baking Powder, Sugar and Eggs into a bowl until its a nice smooth mixture, for better results use a hand mix but you can also do it by hand. 

Use some butter to grease up your cake tins so the cake won't stick to it and then evenly distribute your cake mix into the two tins. 

Leave them in the oven for 20-25 minutes until they are golden and will spring back when you push them down slightly. Leave both to completely cool before spreading your chosen jam onto one surface. Then place the other slice on the top. Sprinkle a nice amount of icing sugar over the top of the cake and voila! That's as easy as it is!
